Orange Glazed Cranberry Pumpkin Bread
INGREDIENTS:
1 (15-ounce) can pumpkin
1 (16-ounce) can whole berry cranberry sauce
4 eggs
2/3 cup vegetable oil
3/4 cup chopped nut, optional
3 1/2 cups all purpose flour
2 teaspoons baking soda
1/4 teaspoon salt
1 2/3 cups granulated sugar
2 teaspoon pumpkin pie spice
1 teaspoon baking powder
GLAZE
1 cup confectioners' sugar
1/4 cup orange juice concentrate
1/8 teaspoon allspice
DIRECTIONS:
Preheat oven to 350 degrees. Combine pumpkin and next 4 ingredients in a large bowl. Add flour and next 5 ingredients and mix well. Pour batter into 2 greased loaf pans. Bake 55-60 minutes or until a toothpick inserted in the center comes out clean. Cool in pan 10 minutes, then remove from pans and cool completely. Mix together all glaze ingredients and drizzle over cooled loaves.
